I’ve always had a sweet tooth and a love for chocolate, especially dark chocolate. Now I’ll admit, a few years ago, saying I had a sweet tooth was an understatement. It was an all out sugar addiction.
However, since I’ve eliminated refined sugar and processed foods from my diet and gone completely sugar free for a period of time, I don’t crave sweets like I used to. Many desserts actually taste way too sweet for me. It’s amazing how much sugar is added to foods these days.
With that said, I do still enjoy a taste of dark chocolate or a gluten-free treat occasionally. I recently made paleo chocolate chip cookies, and they were delicious and super easy to make! This recipe was adapted from Juli Bauer’s Paleo Cookbook, which I highly recommend purchasing. It’s loaded with tons of great recipes.
These cookies are a modified version of her two-toned chewy cookies. I decreased the coconut sugar content and omitted the two-toned effect, so they’re just regular chocolate chip cookies.
Honestly, I cut the sugar by half, and they’re still plenty sweet! I could probably omit the sugar all together, and they’d still taste good. So, if you’re looking for a healthy spin on an old classic, then be sure to give these cookies a try!
